This seasoned snack is thickly shaven, half-dried flakes of bonito. They're not paper-think and completely dry like typical katsuobushi, they're more similar to the texture cured meats like prosciutto.

The flakes are semi-dried, and then seasoned lightly with soy sauce, to give a smoky, salty, umami flavor that goes perfectly with cheese and wine. It comes in an easy-open resealable bag, so you don't have to finish the whole bag at once. It's only very lightly seasoned, to preserve the natural flavor.

Instructions

• Use as topping for salads, tofu, cheese, ramen, udon or yakisoba noodles.
