This Kuzu Starch from Ohsawa is a natural starch that comes in a block form. It is also made of 100% domestically produced Japanese kudzu starch.

Kudzu can be used in recipes calling for a thickener, it is recommended to use it when you are cooking or making sweets.

Try using kudzu in soup, to make a paste, mochi, sesame tofu, adding as a thickener to sauce, or to your batter for deep frying. Try adding it to your karaage chicken batter next time!

It can also be used with other flours or starches such as wheat flour and potato starch. However, this can be a good substitute to those who are allergic to gluten or simply prefer gluten-free products.

Kudzu root is an edible root from the Perennial climbing plant. The starch comes from the root of the plant, but only 10kg of starch can be acquired from 100kg of kudzu root, making it quite rare.

Instructions

It can be used in the same way cornstarch or potato starch would be used as a thickener in sauce. Simply hydrate it in cold water before use.
