Yanagawa Gluten-Free Matcha Green Tea Baumkuchen Ring Cake

Yanagawa began as a small tea factory in the Tanba region of Japan, processing and selling local tea. Eventually they transformed into a company that bakes and sells delicious local sweets. Now, they've returned to their roots in tea to produce this delicious matcha green tea Baumkuchen cake.

This Baumkuchen is made with ingredients local to Tamba, like local eggs and milk, and Tamba-grown rice for the rice flour. Yanagawa doesn't mass-produce their Baumkuchen ring cakes, instead, each piece is baked in the kitchen of their main bakery, right in front of the eyes of their customers.

Their skilled bakers carefully monitor the ever-changing condition of the dough while adjusting the rotation speed of the spit and temperature of the oven.
